Bailey's Chocolate Chip Cheesecake Recipe
Cheesecake is wonderful for any holiday, including St. Patrick's Day! Order cheesecake online, or try this most Irish of cheesecake recipes, made with that other wonderful Irish ingredient, Bailey's Irish Cream. Just one taste of this delicious cheesecake will have your family dancing a jig!
Ingredients:
Crust:
- 1 Prepared Graham Cracker crust
Filling:
- 2 1/4 lb. cream cheese
- 1 3/4 C. sugar
- 5 eggs
- 1 C. Bailey's Irish Cream
- 1 T. vanilla extract
- 1 C. semisweet chocolate chips
Coffee Cream:
- 1 C. heavy cream
- 2 T. sugar
- 1 t. instant coffee
Directions:
Make Filling:
With electric mixer, beat the cream cheese. Gradually add sugar; add eggs one at a time. Add the Bailey's and the vanilla.
Sprinkle half of the chocolate chips over the crust. Spoon in the filling. Sprinkle with the remaining chocolate chips. Bake until the cake is puffy, springy in the center and golden brown, about 1 hour & 20 minutes. Cool the cake completely.
For Cream:
Beat cream, sugar and coffee powder until peaks form. Spread mixture over cooled cake. Garnish with chocolate curls.
