- 3 tablespoons sugar
- ¼ cup melted butter
- 24 ounces cream cheese
- ¾ cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 16 ounce can cherries
- ½ cup sugar
- 2 tablespoons corn starch
To make the crust, combine the graham crackers, melted butter and sugar. Mix until well blended then press the crust into a nine-inch spring form pan. Set this aside until you are ready for it.
For the filling, combine the cream cheese, sugar, and vanilla then mix until it is well blended. Add the eggs to the batter one at a time and whisk slowly until the eggs have been well mixed. Pour the filling into the crust and place the spring form pan in a water bath.
Bake your cheesecake at 450 Degrees for ten minutes then reduce the temperature to 250 Degrees for 30 to 40 minutes. Jiggle the pan gently. If you see just the center wobble, the cheesecake is ready to come out of the oven. Allow the cake to cool to room temperature and place it in the refrigerator.
Meanwhile, combine the cherries, sugar and cornstarch in a saucepan over medium heat. Cook until the topping starts to thicken. Stir the mixture continuously to keep it from burning. Add a squirt of lemon to the topping, allow it to cool and put it on your cheesecake about two hours before you are ready to serve it.
