- 1 Cup Pecans - Crushed
- 3/4 cup Graham Crackers
- 2 Tbsp Sugar
- 4 Tbsp Butter (Melted)
- 4 Packages of 8oz Cream Cheese (Room Temperature/soft)
- 1-1/4 Cup Sugar
- 1 Tbsp Vanilla
- 1 Tbsp Lemon Juice
- 4 Eggs - Beaten lightly
- 2 Cups Sour Cream
- 1/2 Cup Sugar
- 2 Tbsp Strawberry Jello (Powder)
- 1 tsp Vanilla
- Fresh Strawberries or Frozen Sweetened Strawberries
Preheat overn to 350 degrees.
Crust: In a small bowl, combine the pecans, grahams and sugar. Mix in the melted butter. Press into the bottom of a 10" springform pan. Set Aside
Filling: In a Large bowl, beat the Cream Cheese, sugar, lemon juice and vanilla until smooth. Add Eggs one at a time on low speed just until combined. Spoon mixture over your crust.
Baking: Bake on a pizza pan or baking sheet for 45-50 minutes or until center is almost set. Remove from oven and combine ingredients for topping and spoon onto the cheesecake. Cook for another 5-10 minutes.
Add the Fresh Strawberries or frozen glazed stawberries and you are good to go! Makes 10-12 servings. We hope you enjoy this recipe!
