Red Velvet Cheesecake Recipe
This is an all time favorite. We love the rich combination that a Red Velvet cake and a Cheesecake offers.
2 cup Chocolate Cookies (Crushed)
3 teaspoon Brown Sugar
1/4 cup Butter (Melted)
3 each 8oz Packages of Cream Cheese
1 1/2 cup Sugar
4 each Eggs
3 tablespoon Cocoa
3/4 cup Buttermilk
1/2 cup Sour Cream
1 tablespoon Vanilla Extract
2 each 1oz Red Food Coloring
1 each 8oz Package Cream Cheese
1/3 cup Butter
2 cup Powdered Sugar
1 teaspoon Vanilla Extract
1 teaspoon White Vinegar
Mix together the Crushed Chocolate Cookies and Brown Sugar. Mix in the softened butter. Press into a 9" Springform pan. Bake for 10 mintes. Set aside.
Mix Cream Cheese and sugar with a mixer until smooth. Add Eggs one at a time mixing in between. Add Cocoa, Buttermilk, Sour Cream, Vanilla, Vinegar and Red Food Coloring. Mix until smooth. Pour into crust and bake at 325 degrees for 1 hour or until it is almost set. Remove from oven and cool in fridge overnight (Covered in Springform Pan)
Beat the Cheese and softened butter in a large bowl until smooth. Add Powdered sugar and vanilla. Spread over cheesecake evenly.
Garnish with your favorite berry. Strawberries or Raspberries look great with this creation! You can also add in a Mint leaf or two and Chocolate shavings or syrup for presentation.
