How to Top Your Cheesecake With Candy:
Cheesecake is a delightful treat, but you can make it even sweeter with a candy topping. You can spread your cheesecake with whipped topping to form a base or with some candies, such as jelly beans or Jordan almonds, you could also use a cream cheese frosting. Now you are ready to use your imagination to add candy.
One choice which has been used for decorating cakes for years is marzipan. Marzipan is a candy usually made from sugar and almond meal. It is sometimes used as icing, but for cheesecake is probably better used as decorative topping, formed into fruit shapes, animals, flowers, and so on.
Toppings that would be appropriate for ice cream will also be delicious as a cheesecake topping, and can be used to "glue" other candies onto the cheesecake, For instance, crushed candy bars, such as Butterfingers, peanut butter cups or Heath bars, make delicious additions. Sprinkle them over the cheesecake and then drizzle with toffee, caramel or butterscotch topping.
You may also use very small candy decoriations profusely. Nonpariels are small, colored balls which can be scattered over the cake or used to form patterns. Sprinkles are another form of tiny candy which you can find on any cake-decorating aisle. They come in the form of tiny crystals or very small shapes. You can find sprinkles in the form of shamrocks, stars, fairies, cars, and just about any shape you can imagine that can be rendered very small.
For a wedding cake, Jordan almonds in pastel colors make a great candy decoration to top cheesecake.

To fit your cheesecake to a holiday theme, use seasonal favorites.
For instance, jelly beans are a natural for Easter. Or create a "nest" of coconut which you havedyed green with food coloring and place Jordan almonds or tiny foil-covered chocolate eggs in it.
For 4th of July and other patriotic holidays, make a flag design. Spread the cheesecake with whipped topping. Then cover the top left quarter with blueberry pie filling. Stud the pie filling with silver star-shaped sprinkles. Make stripes with red M&M's or other small red candies.
Halloween and Christmas offer a nearly endless variety of small candies to use for your cake: candy pumpkins for Halloween, chocolate reindeer, gumdrops, or Christmas ornaments for Christmas, and so on.
But candy decorations do not have to be all sweetness and light. Red or black licorace whips can make very dramatic designs. Cover the entire cheesecake with whipped topping, and create swirls with the licorice all over the sides and top of the cake! The result is quite beautiful and makes a presentation your guests will not soon forget.
Another bold design can be made with chocolate icing and malted milk balls. Once again, cover the entire cheesecake with whipped topping. Use a tube of chocolate icing with a #2 tip to create a lace design over the entire cheesecake. Circle the cake with malted milk balls, then add additional balls on top of the cake.

How to Make Fruit Cheesecake Topping :
Fruit is the perfect topping for your cheesecake. Whether you choose cherry, strawberry, blueberry or kiwi, putting fruit on top of your cheesecake is never a mistake. Fruit gives the perfect hint of sweetness that enhances an already sumptuous dessert.
After you make a plain cheesecake or receive one in the mail, you can start to top it. You can purchase a can of pie filling and spread it on your cheesecake or make the fruit topping from scratch. To make a fruit topping, mix a 16-ounce can of fruit with half a cup of sugar and a couple tablespoons of cornstarch. Heat the mixture in a saucepan until it thickens. Constantly stir the mix to keep it from burning. Spread the topping on your cheesecake and serve.
If you would prefer to use fresh fruit, slice the fruit and place it decoratively on top of your cheesecake. For families with picky eaters, slice several kinds of fruit and allow your family to top their own cheesecake slices however they like.
How to Make Chocolate Cheesecake Topping :
Mix mini chocolate chips and whipping cream in a microwave safe bowl, and then pop it into your microwave. The chocolate chips should melt after 20 to 30 seconds; try to stir the mixture after 10 to 15 seconds to keep the chips from burning. Allow the topping to cool briefly and spread it over the cheesecake. If you want a chocolate swirl, drag a knife through the top of the cheesecake after you spread the topping on the cake.
How to Make Caramel Cheesecake Topping:
For the perfect caramel cheesecake topping, combine two cups of water with one and a half tablespoons of brown sugar and one tablespoon of unsalted butter. Put the mixture on your stovetop until it starts to boil. Remove it from the heat and add three tablespoons of water with one and a half tablespoons of cornstarch. Return the saucepan to a medium heat for about five minutes. At this point, let the mixture cool to room temperature and pour over the cheesecake. You can use a spoon to smooth the caramel sauce over the entire cake or use a knife to create swirls.
