Bake a Chocolate Chip Cookie Cake for Mother’s Day!

Cookie cakes ingeniously merge two favorite desserts – cake and cookies. Denser than a regular cake and fluffier than a cookie, this dessert is a real crowd pleaser! Does your mother love chocolate chip cookies? If so, why not make one of these as a gift for her on Mother’s Day?

Chocolate Chip Cookie Cake
Ingredients
- 1 ½ sticks salted butter, softened
- 1 cup packed brown sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoons vanilla extract
- 2 cups all purpose flour
- 2 teaspoons corn starch
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups semi-sweet chocolate chilis
Instructions
- Preheat the oven to 350 Degrees Fahrenheit. Place the cooking rack in the center of the oven.
- Grease a 9 inch round cake pan with nonstick cooking spray. You can also use a pie pan. Don’t use butter or oil instead of cooking spray – it may cause the cake to stick.
- Place the room temperature butter in a medium mixing bowl and beat on medium speed with an electric mixer until smooth. Add the brown sugar and beat until well combined and creamy. This should take about one minute.
- Beat in egg, egg yolk and vanilla. Mix until well combined. While mixing, you may need to scrape the sides of the bowl with a rubber spatula to make sure all ingredients mix well together.
- In a large mixing bowl, gently whisk together flour, corn starch, baking soda, and salt. Put the mixer on low and slowly add the dry ingredients to the wet ones. Mix until well combined. The mixture will be pretty thick. Resist the urge to add additional butter – this is the perfect texture.
- Evenly press the cookie mixture into the cake pan. Bake on 350 Degrees Fahrenheit for 20-25 minutes. You’ll know the cake is finished when the cake is a light golden brown. If it isn’t golden brown after 25 minutes, leave it in for a few more minutes. If the edges start to get too brown, cover them with aluminum foil so the rest of the cake can brown without burning the edges.
- Remove pan from the oven and set on a wire rack. Let cool completely. Loosen the edges of the pan with a small knife and place on a serving dish. If you try to remove the cake before it’s completely cool, it may crumble.
- At this point, you can decorate the cookie cake as desired. You can either ice it with her favorite icing or decorate it with a special message.
