Low Calorie Rocky Road Brownies Recipe

Low Calorie Rocky Road Brownies Recipe

Ingredients:

  • 1 cup all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • 4 ½ tablespoons unsalted butter
  • ½ cup plus 1 tablespoon unsweetened cocoa powder
  • 1 ¼ cups sugar
  • 1 tablespoon low calorie chocolate syrup
  • 1 large egg
  • 2 large egg whites
  • 2 teaspoons vanilla extract
  • ½ cup mini marshmallows
  • 2/3 cup chopped walnuts
  • 1/3 cup semisweet chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. Spray an 8 x 8 baking dish with nonstick cooking spray. Add the flour, baking powder, and salt to a medium bowl and whisk together until combined. Set aside.

Add the butter to a medium saucepan and melt thoroughly. Wait until the butter bubbles slightly before removing from the heat. Add the cocoa to the saucepan and stir until well combined. Add the sugar and stir until all three ingredients are incorporated. Add the chocolate syrup, egg, egg white, and vanilla directly into the saucepan and whisk vigorously until combined with the rest of the ingredients.

Pour the butter mixture into the dry ingredients and stir vigorously with a wooden spoon for 50 strokes. This should be enough for all the ingredients to be mixed together thoroughly. Be careful not to over mix because it will make the brownies too hard once they are baked.

Carefully pour the batter into the prepared baking dish and distribute it evenly using a rubber spatula. Sprinkle the marshmallows evenly over the batter. Do the same with the chocolate chips and walnuts. Press down on the brownies gently.

Place the baking dish in the center of the oven and bake for 25-30 minutes, or until a toothpick inserted into the side of the dish comes out clean. Place the pan on a wire rack to let them cool. Don’t remove from the pan until it’s time to serve them.

Variations:

Butterscotch Rocky Road Brownies. Prepare the recipe as listed above. Use 1/3 cup butterscotch chips instead of the semisweet chocolate chips.

Simple Chocolate Brownies. Prepare the recipe listed above. Omit the marshmallows, walnuts, and semisweet chocolate chips and bake as usual.

Cheesecake Brownies. Prepare the recipe listed above. Omit the marshmallows, walnuts, and semisweet chocolate chips. Swirl ½ cup prepared cheesecake batter over the top of the brownies after pouring the brownie batter into the pan and bake as usual.

Mint Chocolate Brownies. Prepare the recipe listed above. Omit the marshmallows, walnuts, and semi sweet chocolate chips. Sprinkle ½ cup mint-flavored chips over the top of the brownie mix and bake as usual.
