Chocolate Truffle Cheesecake Recipe

The deep, rich chocolate truffle taste of this cheesecake will bring joy to every chocolate lover you know. It is perfect for birthdays, holiday gatherings, or any time you need a really spectacular yet easy to prepare dessert.


Ingredients:

Crust:
1 c. chocolate wafer crumbs
3 tbsp. butter, melted

Filling:
2 (8 oz.) pkg. cream cheese, softened
2/3 c. sugar
2 eggs
1 c. chocolate chips, melted
1/2 tsp. vanilla


Directions:

Preheat oven to 350 degrees.

CRUST:

Stir together crumbs and butter in small bowl. Press firmly onto bottom of greased 9 inch springform pan. Bake 10 minutes.

FILLING:

Beat cream cheese and sugar at medium speed until well blended. Then add eggs, one at a time, blending after each addition, but being careful not to over-beat. Blend in chips and vanilla.

Pour the filling over the crust.

Bake 45 minutes. Check to make sure cake is firm, but the center is still slightly soft. With a thin knife or spatula, loosen cake from rim of pan. Let cool 30 minutes to an hour before removing the rim. Chill the cheesecake at least 3 hours or overnight before serving.

You may want to top this cheesecake with raspberry sauce or garnish with chocolate curls and fresh berries.
