White Chocolate Raspberry Cheesecake Recipe

A favorite for the Valentines Holiday and Anniversaries, this White Chocolate Cheesecake Recipe is the definition of Indulgence! Make it simple or add some fun garnish to really take this Cheesecake over the top. I recommend adding shaved White Chocolate, Fresh Raspberries and a Raspberry glaze on top. (Add a Heart with Red Icing or the glaze to represent your love this Valentines day!)


  • 1 each Fresh Raspberries
  • 1 each White Chocolate Bar
  • 4 each 8oz Cream Cheese (Softened)
  • 1 3/4 cup Sugar
  • 1/4 cup Brown Sugar
  • 6 each Eggs
  • 2 teaspoon Vanilla
  • 1 3/4 cup Sour Cream
  • 1/2 cup Chopped White Chocolate (or Chips)
  • 1/2 cup Raspberry Jam - Thinned with 2 tbsp water
  • 3/4 cup Sour Cream
  • 3 tablespoon Sugar
  • 1/2 teaspoon Vanilla
  • 2 tablespoon Rasberry Jello (Powder)
  • 1 tablespoon Water
  • 2 1/2 cup Graham Cracker (Crushed)
  • 1/2 cup Cashews - (Crushed with some small pieces)
  • 3 tablespoon Butter (Melted)


Preheat oven to 350 degrees.

Grease the inside of a 10" springform pan. Use another pan on the bottom rack with water or use tinfoil around the base to create a water bath. (Helps with cracking).

Crust: Combine Cashews, Graham Crackers and Butter, Mix and add to the pan. Use the back of a spoon to press it into the pan. Bake for 7-10 minutes. Remove and set aside.

Filling: Mix Cream Cheese and Sugar until smooth. Mix in eggs 1 at a time. Add Vanilla and Sour Cream, don't over-mix. Fold in White Chocolate Chunks. Pour into Springform pan. Spoon Jam in a circular motion on the top of the Cheesecake. Use a knife to swirl the jam into the cheesecake, but leave some of the swirl visible. Add 1 1/2 Inch of water to a baking pan and insert the springform pan and place in the oven. Bake for 60-70 minutes or until just firm. Turn off the oven and leave the cheesecake in the oven with the door ajar for 2 hours. Remove and refrigerate. Remove from Sprinform pan onto platter for presentation.

Topping: In a bowl, combine sour cream, raspberry jello, water and vanilla. Mix until smooth. Spread over the top of Cheesecake. Garnish with Chocolate, Glaze, Raspberries or whatever comes to mind that fits your occasion!
